Today here is ‘Santo Stefano’ Day, in Canada and England it is Boxing Day and in other parts of the World it is just the day after Christmas.. But here the feasting continues and I got to try out a very simple but delicious sweet for dessert tonight-stuffed dates or ‘datteri ripieni’

Stuffed Dates

*16 dates

*16 tablespoons of mascarpone cheese

*6 tablespoons of espresso coffee

*1/4 cup of crushed almonds

Cut dates in half, take out nuts in  center. In bowl blend in coffee to mascarpone. Fill each date with about 1 tablespoon of mascarpone mix, top with crushed almonds. Refrigerate till ready to serve..
