Almonds, Romance & Gluten Free Amaretti

What does Romance have in common with Almonds? In Ancient Rome, the tradition of giving almonds as favors to guests began. The almonds were coated with honey since sugar cane was not yet known at that time.

The traditional Italian amaretti  cookies are based mainly on almonds and are so delicious and  worth  not missing the taste experience, so I have created a recipe for those that have to eat gluten free. But they are so delicious anyone will love them. The traditioal amaretti cookie is made with lots of almonds which  provide loads of health benefits. Crush them and  they make  an excellent  topping for ice cream or mix with a little butter and use as a tasty, gluten free pie crust.

Soft Amaretti (Amaretti Morbidi)

1 lb of almonds peeled

2 cups sugar

3 egg whites

1 tablespoon potato starch

1 tsp almond flavoring

powdered sugar

½ tsp vanilla

pinch of salt

Finely chop almonds and mix with sugar and potato starch and vanilla. Beat egg whites and with a pinch of salt to firm peaks, add in almond mix and almond flavoring and mix. With small spoon form small balls of dough- the size of a walnut. Cover a cookie sheet with parchment paper. Place amaretti on cookie sheet and let dry for 3 hours there. Then sprinkle with powdered sugar and place in oven preheated to 200 degrees for 30 minutes.
