If you have never spent an August 15th on the beach in Italy before, you need to at least once….there is no other day in the year that you experience such a carefree, relaxing, feel of summer..it is somewhat unexplainable. Since Italians worship the beach and their summer sun, they take this Holiday seriously and make sure to soak up as much sun, sand, food, and relaxation as possible on this day. It signals almost the end of summer here..and the fireworks displays on the beaches are just as spectacular! since I will be spending my 15th on the beach tomorrow and am still working on the eggplant parmigiana I will be bringing for a beach picnic for 16 or so here is last year’s post that includes my eggplant parmigiana recipe..
