ciambella di sora, peppers eggplant

So hot..but more reason to eat al fresco…was able to find these ciambella from a town named Sora. These  have their own trademark now and are sort of a Sora souvenir..luckily I am not based too far from Sora…. they went perfectly with a light  picnic lunch of a cool ratatouille made with fresh peppers, fresh eggplant, zucchini and fresh San Marzano tomatoes….

The ciambella are sort of a combination between a bagel and a crisp bread-they are boiled then baked..my grandmother used to make these and eating one brings back so many memories of waking up early in the morning to the smell of freshly baked ciambella…
