Kiwi Pineapple Macedonia with lemon honey syrup

1 lb fresh kiwi, peeled and sliced

1 fresh pineapple, cored, peeled, cut into cubes

1 fresh lemon

3 1/2 tablespoons honey


Place cut kiwi and pineapple in a serving bowl. Squeeze lemon and place juice into small saucepan, add in honey, place over low heat and stir till honey has melted. Then allow mixture to continue to simmer for 10 minutes ,stirring frequently. Mixture will become a syrup. Pour mixture over fresh fruit, stir. Place in refrigerator for 20-30 minutes till cool and serve with a fresh mint leaf garnish.
