I have always been entranced by the state of Oklahoma,sort of fascinated in fact…but not because I ever visited but because of the film and the musical, I felt acquainted with the state. The mere mention of the state sets off a chorus of singers and dancers in my mind..singing “Oklahoma.. O-K-L-A-H-O-M-A…OK.

So knowing that I would be attending the opening night of a production of Oklahoma at the Pennsylvania Shakespeare Festival made my weekend..a chance to hear the highly infectious tunes of Rodgers and Hammerstein. And it was a chance to visit Oklahoma, if only in my mind..but what a trip! If I was blindfolded and brought to the theater I would have thought that I was in the center of Broadway, but I was in Center Valley, Pa.

Cast and crew were in fine form befitting the score so eloquently composed by the uber talented Rodgers-Hammerstein team. And did I mention the cast was so utterly talented with voices that should someday grace the stages of a Broadway theater..and oh yes the performance is dedicated to the people of Okalahoma.. An Italian Angel..food cake..that is..

There are so many angels in our life..some say that they are among us to give us hope and inspiration ….hoping this Italian angel food cake is an inspiration for your next picnic or just a get together with those that are the ‘angels’ in your life..and make the world a little ‘lighter’….

 

I am a naturally sweet ingredient in the process of life

Italian Angel Food Cake

Filling

1 Angel Food Cake-(see recipe below if you would like to make your own)

1 lb ricotta cheese

1/2 cup confectioners’ powdered sugar

1 square of  dark chocolate grated

2 tablespoons of Rum

1 tsp vanilla

2 tblsps toasted,chopped almonds

1/2 cup fresh fruit-(strawberries,blueberries,peaches,pineapples,kiwi work best)

Place cake smooth side up on a cutting board. Cut cake into 3 even layers.

Place ricotta cheese, sugar ,grated chocolate in food processor,blend well.Then add in vanilla and rum,blend 2 minutes. Place mixture in bowl, stir in fresh fruit and almonds.

Begin filling cake by placing bottom layer on serving  plate,spread with half of filling, top with middle cake layer ,spread with remaining filling, top with top layer. Chill in refrigerator for 2 hours or until filling is firm.

Angel Food Cake

1 cup sifted cake flour

1 3/4 cup sifted sugar

11 egg whites, room temperature

1 1/4 tsps cream of tartar

1 tsp vanilla

1/4 tsp almond extract

pinch of salt

Sift flour with half the sugar onto wax paper.Set aside. Beat egg whites with cream of tartar and salt in large bowl till they double in volume. Beat in remaining sugar one tblsp at a time,until soft  peaks form.

Fold flour mixture,1/4 cup at a time into egg white mixture with wire whisk or rubber spatula until smooth and blended into egg whites. Fold in vanilla and almond extracts. Pour into ungreased 10 inch tube pan. Bake in oven preheated to 350 degrees for 50-60 minutes or until to springs back when pressed lightly. When done ,invert and let cool in pan,then remove gently by first loosening edges. Then place in filling following directions.

Sons of Italy Scholarship Dinner.. My inspirations..

For those that could not attend my speech tonight for the Sons of Italy annual Scholarship dinner-here is the context (6-4-13)

I want to especially thank President Lorraine Fitzgerald and all the  members of the  Justice Montemuro Sons of Italy lodge, parents and family of scholarship recipients and scholarship recipients and guests for inviting me to speak to this event tonight.  It  was truly an honor!

. Not only because Sons of Italy  help  preserve the preservation of Italian culture and heritage  but because we are  also so close to my beginnings. Most of you may not know it but I was born  in Philadelphia,before my parents moved us out to the suburbs. Through my grandparents sacrifices of coming to this country I have managed to achieve things I could only dream of thanks to my parents who instilled in me the hard work ethic passed on by my grandparents.

My mom instilled in me my love of books and literature at a very early age and had me reading by 3 or 4 yrs old and I began devouring books and literature of any kind..my Dad inspired the dreamer in me.. When he was growing up in South Philadelphia a treat for him was a weekend ride  to the country..he desired strongly to raise his family there, to have a house surrounded by trees and land where I could play ..so much so that one story I tell in my book is about my parents buying me a sled for Christmas-even though we were surrounded by concrete sidewalks in the city of  Philadelphia..people thought he was crazy since there were only sidewalks where we lived, but he wanted me to have a place that I could freely go sledding and in 3 yrs we had our house in the burbs and I did go sledding down the hill in the back of our house for many Christmases to come.

But I  also became  accustomed  to having large Sunday dinners at either of my grandparents home in West Philly or South Philly..these big Sunday get togethers  some times included accompanying my  grandfather on trips to the Italian market to buy the ingredients for Sunday dinners and/or his grapes to make wine… Sundays were always filled with food ,opera and storytelling about their towns in Italy..and all of a sudden it seemed like it was all gone…my grandparents and relatives from Italy had suddenly all passed away and what we did not realize is how much we took that all for granted…and I needed so much to find my identity to… find out about my past

..As the great journalist Pearl  S. Buck once said “You need to understand your past to be able to understand your present and future”…and find out I did….I began spending time at my great grandparents vineyard in the  mountains of Abruzzo ,the very vineyard where the nazi soldiers killed my great grandfather because he would not let them take his pigs for food…and I began studying the cookbooks of one of my great aunts, who I never met but she was my grandmother’s older sister. She   had to support the family because their parents’ passed away.

She made a living as a personal chef and worked for members of the royal family…her cookbook was also entertaining, telling you to time things by saying a verse of the Ave Maria and other prayers… And I had written for magazines and newspapers while in college, so I began to keep a diary while in Italy. But also fell in love with food and studied the culinary arts there. The stories I wrote were not just recipes but also about the experience that went with the recipes. Food in Italy is not just about eating, it is life, it is history, it is art, it is culture, it is many things. So my books do not just include recipes,they also include stories, since I too believe that food relates to so many things in life!

I began teaching culinary workshops in Italy for tourists and could not believe how intimidated people were about cooking Italian dishes.  But Italian food ,like life is a simplistic art. And thus the title of my books and trademark was born..The Basic Art of Italian Cooking. It took me about 2 years to write and get my first book published. I never realized how long of a process it was.. nevertheless my second book The Basic Art of Italian Cooking: Holidays and Special Occasions was released 2 yrs after that. And one day I received an email that I thought was spam..It was from  the office in Spain of the Gourmand World Awards contacting me that my second book had been selected to receive the best Italian cookbook in the USA award  for 2010 in Paris. I did not pay much attention to it, since I thought it was spam mail, until they emailed me 3 times and then sent a letter and a personal; email..so off to the Paris awards ceremony I was among the top chefs in the world it was very exciting.

So of course today when you have a book, you have to have a blog an it is a work in progress but I have been working on it for 5 years and this year 2013 I was voted the Culinary Blogger of the year by the New York travel writers society- will be getting the award at a ceremony a the Palace Hotel in December in NYC..

As St. Thomas Aquinas said” the things that we love tell us who we are”….My love of my heritage has inspired me to do so many things and be introduced to people from all over the world as food is an international language ,but more importantly Italian food..I quickly realized, too my surprise that the world is fascinated ,well not just fascinated but crazy about our food, our fashions, our style our opera,art,architecture and way of life.

When I had the idea to write memoirs about my travels and life in Italy and cookbooks I first thought “who would be interested in recipes, it is not that big of a deal, sine we cooked that way in my home all the time”…but I was proven wrong…people go bananas for Italian food and wine, my blog now has 100,000 worldwide followers and grows everyday..

And I am, now working on filming my own TV series in Italy to be broadcast in the USA….and where does this all go back to

Someone once said” Watch your thoughts; they become words. Watch your words; they become actions. Watch your actions; they become habits. Watch your habits; they become character. Watch your character; it becomes your destiny."

All of us here has inherited a gift… A gift that no one can take away from you or take back…your heritage.. explore it and cherish it,  learn about your family tree, the Italian language,food, art, opera..preserve your heritage.

Panzanella and Pane e Tulipani

Don’t throw out that day old crusty bread yet…A panzanella salad is one of the most simplest, yet yummy Tuscan style salads.…add in tomatoes, celery, cucumbers, onions..olive oil, balsamic vinegar or wine vinegar..and that is a salad..Serve with a refreshingly chilled white wine and you have a meal!

And in honor of the recent Cannes Film Festival…may I suggest a film to eat by Pane e Tulipani (presented at the 53rd Cannes Film Festival)..filmed in part in the seaside resort of Pescara

Panzanella Salad

*4 slices day old crusty bread cut into cubes

*2 onion slices cut into small chunks

*1 tomato sliced

*1 cucumber peeled and sliced

*1 small head of romaine lettuce

*4 tablespoons extra virgin,cold pressed olive oil

*2 tablespoons freshly shaved parmigiano-reggiano cheese

*1 tablespoon balsamic vinegar

Cut bread into cubes and place under broiler for 2 minutes or until golden.

Cut onion, peel and slice cucumber and set aside. Wash lettuce and tear into small pieces. Place in bowl with cucumber and onion. Add in sliced tomatoes. Place olive oil, balsamic vinegar  in cruet, Whisk till blended. When ready, pour over salad. Shave parmigiano reggiano cheese directly over salad and toss. Serve

Ferratelle, Pizzelle for Memorial Day Picnic and A Free Book! The Basic Art of Coffee

Pizzelle or Ferratelle…These are the perfect portable dessert for any picnic.. But first ..be sure to set an extra plate at your table this Memorial Day as an honorary plate to remember all those that gave their lives for our freedom in the USA…and also to honor those in service they deserve this day of honor and more!

This recipe is known as ferratelle because that is the traditional name of the cookies that most call pizzelle…but ferratelle is what they are called in Abruzzo and this recipe is from Abruzzo and uses saffron from L’Aquila..if you can’t find saffron from L’Aquila Italy..use whatever saffron you find…not quite the same but similar…

You do need a pizzelle iron or electric pizzelle maker to cook these wafer like gems.

Ferratelle allo Zafferano

400 gr flour

1 small envelope of saffron from L’Aquila,Italy

1/4 cup sugar

2 tablespoons Aurum Liqueur

extra virgin olive oil

In a small dish blend the saffron with olive oil just until saffron is melted. Set aside.  Sift flour in another bowl, add in eggs, blend by hand or with electric mixer. Then add in the saffron with olive oil, sugar and a few drops of Aurum liqueur. The dough has to be mixed till it is smooth and well blended. Then roll the dough into two balls.  cut off a piece and make a cylinder of about 1 inch in diameter. Cut off pieces that are about 1 1/4 inch in length. Heat electric pizzelle maker and follow directions for use.

‘Once upon a time’ (or as we say “C’era una volta”) pizzelle or ferratelle were made with a single wafer  iron, cooked over a hot stove. The wafers had to be cooked one side at a time …but it is not as popular since you can only make one at a time.. but they are more flavorful .. a slow process…many of the old recipe books (including one from my great aunt who was a personal chef) tell you to’ time the cooking of the pizzelle by saying the Ave Maria prayer and when the prayer is finished turn over the iron cook on the other side and time the same way’….

When Life Gives You Lemons.. Make Pesto..

Although they say when life gives you lemons..make lemonade.. I say make a yummy lemony pesto instead..

In the Ode to the Lemon, Poet Pablo Neruda called  the juice of a lemon ‘nature’s most intense liqueur’….

For 4 people

remove the peel from 4 (uber) fresh lemons..place in food processor with 3/4 cup shelled almonds and 1 tablespoon of salted capers 3 tablespoons of extra virgin olive oil. Blend..use this pesto to dress a salad, or as a sauce for cous cous or  a refreshing sauce for cold summer pasta or even a hot pasta dish..

The Good Earth and Nonno’s (Earthy) Lunch Frittata..

Spring always reminds me of The Good Earth..the award winning piece of literature penned by award winning author/humanitarian Pearl S, Buck..and the true goodness of the earth…providing us with fresh zucchini and strawberries, asparagus, potatoes,and much more of the  earth’s delicacies…..

Nonno’s Lunch Frittata

(excerpted from the Gourmand World Award Winning Book The Basic Art of Italian Cooking: Holidays & Special Occasions-3rd edition)

*2 potatoes, peeled ,sliced thickly and pre cooked

*6 medium eggs

*fresh rosemary to taste

*extra virgin olive oil

*pinch of salt

Cook potatoes in boiling water until firm, not too soft, approximately 5 minutes. Drain and rinse under cool water, peel and slice into thick slices. Place 1 tablespoon of olive oil on roasting pan, place in sliced potatoes, sprinkle rosemary, pinch of salt ,drizzle olive oil on top. Place under broiler till golden brown, remove, set aside.

Break eggs open and place in one bowl, whisk with fork till foamy. Place 2 tblsps extra virgin olive oil in saute pan and heat. Place in eggs, rosemary, pinch of salt, potatoes mixture and cook till edges are firm. You can also do a final browning by placing in oven if you cook with an oven safe saute pan.

Remove from heat, cool, slice and eat or to take as a lunch to work or to a picnic,-wrap each slice in parchment or plastic wrap and take away. Or make a scrumptious pannino by drizzling sparingly olive oil on a crusty Italian or French style roll or a crusty baguette, place in slice of frittata to cover the bread. Wrap pannino in parchment paper. Take with you for a scrumptious meal on the go, or just eat at home!
